CABBAGE, BACON AND ONION STIR FRY

CABBAGE, BACON AND ONION STIR FRY

CABBAGE, BACON AND ONION STIR FRY
This is a great way to prepare cabbage and hide a few more veggies in with the veggies, so to speak. Delicious!
2 tbsp olive oil (30 mL)8 cups chopped cabbage (2 L)2 bell peppers, chopped1 medium onion, chopped6 slices bacon, cut into small piecesSalt and pepper, to taste
In large nonstick frying pan, in olive oil and over medium heat, add cabbage, bell peppers, onion and bacon. Cook until all the vegetables are soft and the bacon is cooked (it will be more like cooked ham than crispy bacon). If you would prefer crispy bacon, cook separately and add at the end of cooking! While cooking everything, sprinkle with salt and pepper, to taste.
